Nah..it's not too early...since it's already a bit late (in some cases) to book some of the most popular valentines happenings.
So, I gathered for you some of my suggestions that may help out some of us:

I've been there 3 times last year: cuisine is good, surroundings are lovely,
your GF will love the spa + massages.
Be careful though: the default Valentine package comes with a standard room with no jacuzzi, no fireplace. But you might ask for the Valentine package in Deluxe Suite (1 King Sized Bed, Double Sofa-bed, Whirlpool bath, Fireplace): a bit pricey (around $580 1 night incl. Breakfast, Dinner Table d'hôte Massage therapy) but worth it.

Used to be my favourite all inclusive valentines escapade (2 nights with dinner, breakfast, great french cuisine, very cozy with fireplace, jacuzzi..etc...for about $425), but it's being a while I haven't gone back there. So I have no clue of how it is by now.

Never mind the food .... or...well...sometimes they have good cuisine, sometimes very average...anyway, you wont find as romantic and scenic as 737 (with your love one, romantically overlooking the city...).

As for me, well...humm...I will spend Valentine far from Mtl: Fairmont Banff Springs (GF will freak out because she is into intensive searches for Valentine in Mtl...little that she knows -> at the last minute, I will cancel all of that...to the West, honey! lol). I'm a suckup for Banff:p
