I'm late to this thread, but CaptRenault's reply is pretty good and pretty much the advice I'd give. I've found that booking an escort in Montreal is kind of like going to a Japanese place that's omakase only. The place has a good reputation, so you shouldn't be so picky with the menu.
Get the idea of "perfect" out of your mind. As Voltaire said, "Le mieux est l'ennemi du bien." ("The perfect is the enemy of the good.") If you try to achieve perfection in your booking process, then you will probably be disappointed.
Excessive pickiness in women sounds a lot like excessive pickiness in food. Gourmands seem to approach with a much more open mind. There's a reason "have it your way" was a famous fast food slogan, I suppose.
you may actually have a "perfect" encounter with a girl that was only your second or third choice but who matched your preferences and who happened to be available when you wanted.
It's kind of like going to a restaurant with your mind set on lobster, but the waiter tells you the swordfish is fresher. You run the risk of a dishonest waiter trying to get rid of the swordfish, but it's just as likely the waiter knows what's good. You may not have swordfish on your mind, but it might turn out to be one of the best meals you've had.
In sum, there is no way to guarantee a great time for every encounter. Even if you do a great job at researching the girls and talk to the bookers, you can still be disappointed. Sometimes two people just don't click and you don't discover that until you meet in person.
I get where the OP is coming from, I have the type that I like too, and it's not wrong to strive to optimize your encounters. But OP's behavior also suggests why he's paying for sex, obsessing about a certain type, and then getting defensive when he's called out on it.
It's behavior I'm trying to avoid myself. The guys I know who are good with women aren't so choosy -- it's usually the losers who are. The guys I know who get laid most I know approach broadly and take what's the best, instead of gaming like a sniper and getting oneitis. They're also a lot more nonchalant and non-reactive when someone calls them out.
