I don't really get your concern, you don't need much to book an hotel... the number of nights and thats about it... you can ask the guy to write you the price on a paper if you don't understand french numbers. After that it depends on your need, personally when i go to a hotel, i check up, and the only time i speak to them again mostly is when i check out...

Mostt people in quebec knows at least basic english, they won't start a long conversation but can understand some words like how many nights you want to stay and stuff like that. English is so much easy to learn... not to mention every school teach the basics in elementary
