My famous hot crab and horseradish dip, which I will be making on request of friends Christmas Day, runs off of this recipe, but I add the Sargento mixed Mexican cheeses and chopped fresh scallions to this dip, plus I bake rather than microwave the ingredients. This is the simple recipe for those who have no time but I suggest adding the shredded Mexican cheeses and chopped scallions, mix and then bake at around 350 F for 45 minutes:

Good luck- and adjust the bake time noting that the ingredients do not require cooking - the cheese just needs to be melted. All other ingredients are already cooked so the dip just needs to be hot. Therefore 15-30 minutes may be sufficient depending on the quantity of dip you are making. You can also use a microwave if pressed for time or just need to heat it back up.

Well I don't add a lot, I would suggest around a half cup but more or less depending on taste. I actually use the Trader Joe's shredded 4 cheese Mexican mix- Cheddar, Monterey Jack, Asadero and Queso Blanco. I also use that same cheese mix raw on salads and melted on chicken patties after putting some chipotle salsa on top. It's a very good multipurpose cheese mix. You can also use with tacos, dips and nachos.

ALSO IMPORTANT: ALLOW CREAM CHEESE TO WARM TO ROOM TEMP TO SOFTEN BEFORE MIXING

Good luck- I am making the same dip and bought all ingredients and two kinds of crackers, Melba Toasts and the large round butter crackers. Let me know what you think of it.

Will do..I just got tortilla chips for it. Crackers seem interesting though.

Tortilla chips will work, but it comes down to what you prefer. The advantage of the tortilla chip is it allows you to scoop more dip. I did consider tortilla chips but realized the dip could be eaten up more quickly with them, LOL, so went with Melba Toasts and Butter Crackers which are a little smaller and allow the dipper a smaller scoop of dip.

I make very similar dip, next time I am trying your recipe. Melba toast is the way to go. Or better is when I make my own toast with good french bagette panned in butter, mium :)

EB's Christmas Eve Frittata

Can also be made for Christmas breakfast. It's in the oven right now. A recipe of my own creation but I consulted some other frittata recipes on the Internet, which called for 8 eggs, but since I am only cooking for myself I made a smaller portion.

Ingredients:

4 eggs
1 tbsp water
3 tbsp half and half
1 tbsp Parmesan/Romano grated cheese
salt to taste
cayenne pepper to taste
approx.3/4 cup sauteed red peppers and Baby Bella Mushrooms
4 strips Trader Joe Uncured Black Forest Bacon, pre cooked and chopped
2 fresh scallions, chopped
1/2 cup Trader Joe's Shredded Mexican Cheese Mix (Cheddar, Monterey Jack, Asadero, Queso Blacno)

Mix eggs first, then add other ingredients and mix in a small pyrex baking dish.

Bake for 45 minutes at 350 degrees, or until a fork stuck in the frittata come out clean.

I made it today EB..turned out pretty good, but the recipe should probably call for a little salt IMO
