I have attended the Montreal F1 weekend more than 10 times. I have spent as few as 4 days and as many as 8 days in Montreal during the time of the race.
In general, it is not difficult to book escorts during the week of the F1 race. Obviously the demand from visitors goes up, because, well, there are more visitors in town. But most of the visitors are in town mainly for the race and other social events and not just to book escorts. Summer is already a busy time for the escort industry and while F1 week might be especially busy, it is definitely possible to book girls during the week and the weekend of the race.
However, as always, you need to plan and be flexible. You cannot call an agency after you come back from the track at 5PM and expect to have your choice of girls and availability times. it's better if you arrange your date in the morning before you head for the track. Most fans don't arrive in town until Friday of the race week so if you are in town starting Monday or Tuesday, then the availability of girls is not much different from any other summer day.
The strip clubs do get crowded later in the evening (after about 10PM) during Friday and Saturday night of the race weekend. But go a little earlier and you can walk right in.

The truth is that it's like any other summer week and weekend...only more so. You can deal with it by doing some planning and being flexible. It's the best week of the year in Montreal and it's well worth going there for the race and all the fun that surrounds it.
Had a blast last year. Didn’t see one provider who I wanted and had to go to plan c, D and once E! The plan E was spectacular! Go and have fun, hotel and air b n b rates are crazy though.

Capitaine Renault's advice is spot on. It isn't that difficult to get an sp to visit you however more advanced planning may be required unless you're not picky at all.
On another note back in the day there used to be a saying where many of Mtl's strippers would pick GP week to also become escorts. For women in the sex trade there is so much more money than usual flowing around during that particular week. I once asked a local stripper if this was true and she replied that many of her 'colleagues' indeed made themselves available for a price during that week, but she wasn't one of them. However she went on to tell me a story where a well-known American actor would often visit her club while shooting in the area and he would often send over a limo to pick her up & bring her to his rented home outside of Mtl. I didn't bother to tell her that in my eyes this was no different than her 'colleagues' chosing to also work as escorts during GP week.
Basically what i'm saying is that during GP week you just might end up having some luck getting a stripper to later show up at your room if you're upfront with her, tell her why you're in Mtl and what you enjoy doing in Mtl during your leisure time. You never know where it might get you but that's one week where it may be worth a try.
